Dr Anthony Chaffee is an American medical doctor specialising in Neurosurgery who over a span of 20 years has researched the optimal nutritional habits for athletic performance and health. It is his assertion that most of the so-called chronic diseases that doctors treat these days are actually caused by the food we eat, or don’t eat, and can in many cases be reversed easily with dietary changes.Dr. Chaffee began his University education studying Molecular & Cellular Biology with a Minor in Chemistry at the University of Washington in Seattle at the age of 15, which culminated in attaining his MD from the Royal College of Surgeons.Dr. Chaffee is an All-American rugby player and a former professional athlete in England and America, having taken several years off from his education for the pursuit of sports between his undergraduate degree and medical school. Throughout his athletic career he saw first hand the monumental difference that diet makes to performance and recovery.Dr. Chaffee almost accidentally came across and practiced a fully carnivorous diet from age 20 to 25, having first learned of the toxic nature of plants during his University education. Since then he has rediscovered this truth and more and has dedicated many years and a large part of his professional practice to the study and education of diet and nutrition. He personally practices a fully carnivorous diet and currently resides in Perth, Australia where he does private consultations and clinics in functional medicine and nutrition. Please consider supporting Low Carb Down Under via Patreon. Dr Penny Figtree graduated from the University of Sydney in 1993 with first class honours. With over 20 years in general practice she has now decided to focus on weight loss and diabetes. This decision was made after seeing the power of a low carbohydrate diet to help people lose weight and for some to even reverse diabetes. Dr Figtree had previously tried to help patients using various diets such as low fat diets, Optifast, the 5:2 fast but nothing really worked. In the end she would just say “as long as you are not gaining weight then that’s great”. Then Dr. Figtree read a book called “Always Hungry” By Professor David Ludwig where he explained the INSULIN CARBOHYDRATE MODEL OF OBESITY.Dr. Figtree has now been practising low carb medicine for 2 years. She describes this as the most rewarding part of her career, stopping medications and patients feeling well. Please consider supporting Low Carb Down Under via Patreon. Ivor Cummins BE(Chem) CEng MIEI PMP® completed a Chemical Engineering degree at UCD in 1990. He has since spent over 25 years in corporate technical leadership and management positions, and was shortlisted in 2015 as one of the top 6 of 500 applicants for “Irish Chartered Engineer of the Year”. Ivor’s focus and specialty is leading teams in complex problem-solving scenarios. He has often led worldwide teams with over 60-70 engineers working on major technical issues; the largest of these involved product issues where hundreds of millions of dollars were in the balance.Several years ago, Ivor encountered a complex technical challenge in his personal life. Within eight weeks he had resolved and optimised all of his blood test metrics. Also, he had shed over 15Kg of body fat with relative ease.In the following years he continued his research on the many “root causes” of modern disease, from “cholesterol” through to insulin resistance. He has become a professional speaker of note, giving many public lectures and chairing interviews with worldwide health experts. Most notably he was invited by the President of the British Association for Cardiovascular Prevention and Rehabilitation (BACPR) to give a keynote talk on heart disease root causes, at their annual conference in London last October. All of Ivor’s public lectures and interviews are available on his YouTube channel, where nearly a million views have been recorded to date: https://www.youtube.com/channel/UCPn4FsiQP15nudug9FDhluA.His book on chronic disease root causes and resolution strategies (co-authored with Denver doctor Jeffry Gerber MD, FAAFP) will be released by a major US publisher on February 27th 2018:https://www.amazon.com/Eat-Rich-Live-Long-Mastering/dp/1628602732/His blog and other content is available at www.thefatemperor.comIvor lives in Dublin, Ireland, with his wife and five children.
