Garnish with a lemon twistSabot1 1/2 oz London Dry Gin3/4 oz Cointreau (or triple sec)1/4 oz Rich Simple Syrup (rich is 2:1 water to sugar, 1/4 oz is 1.5 teaspoons)3/4 oz Lemon Juice1 egg white3/4 oz Sparkling White WineLemon twist for garnishCombine gin, Cointreau, syrup, lemon juice and egg white in a shaker with no ice. Shake for 10-15 seconds to emulsify. Add ice to the shaker and shake until chilled. Double strain into a chilled coupe glass and top with the sparkling white wine. Add the garnish.#doitforwilson
